Step-by-Step Instructions

  1. 1

Soak walnuts in water for 30 minutes if possible (this removes bitterness and improves flavour). Not mandatory.

  2. 2

If using frozen bananas, remove from freezer 2 minutes before blending.

  3. 3

Add all ingredients to a high-powered blender: walnuts, bananas, almond milk, soaked almonds, honey, cinnamon and cardamom.

  4. 4

Blend on high for 45–60 seconds until completely smooth and creamy.

  5. 5

Taste and adjust sweetness. Add more honey, a date, or a pinch of vanilla if needed.

  6. 6

Pour into tall glasses. Optionally top with crushed walnuts, a banana slice and a drizzle of honey.

  7. 7

Drink immediately for the freshest taste, or refrigerate for up to 24 hours (shake before drinking).

💡 Chef's Tips

  • Freeze ripe bananas in advance for the creamiest, ice-cream-like texture without adding ice.
  • Add 1 tbsp natural peanut butter or almond butter for extra protein and creaminess.
  • For a chocolate version, add 1 tbsp cocoa powder and a handful of dates — absolutely delicious.
  • For kids who don't like walnuts, start with just 3–4 walnut halves and gradually increase as they get used to the flavour.
  • Add a handful of spinach for a green version — you won't taste it but you get all the nutrients.
