Step-by-Step Instructions

  1. 1

Dry roast almonds, cashews and walnuts in a heavy pan over medium heat for 4–5 minutes, stirring constantly. They should be lightly golden and fragrant.

  2. 2

Remove from heat and add coconut oil immediately — toss to coat all the nuts evenly.

  3. 3

Season with rock salt, black pepper and cumin powder. Toss well.

  4. 4

Allow to cool completely at room temperature — about 15 minutes. The nuts will crisp up further as they cool.

  5. 5

Once cool, mix in raisins, pistachios (these don't need roasting), roasted makhana and chocolate chips if using.

  6. 6

Store in an airtight glass jar at room temperature for up to 2 weeks, or in the refrigerator for up to 1 month.

  7. 7

Divide into 40g portions using a small kitchen scale for perfect daily servings.

💡 Chef's Tips

  • Never roast raisins — they dry out and become hard. Always add them after cooling.
  • Make a large batch (4–5x the recipe) on Sunday for the whole week's snacking sorted.
  • Add dried cranberries or apricots for a sweeter, more colourful mix.
  • For a spicy version, add a pinch of red chilli flakes and chaat masala — very addictive!
  • Use small glass jars with lids — they make excellent desk snack storage and last longer than plastic.
