Step-by-Step Instructions

Dry roast almonds, cashews, pistachios and walnuts separately in a pan on low heat for 3–4 minutes each. Let them cool completely.

Blend the cooled roasted nuts in a food processor until they form a coarse powder. Do not over-blend — you want some texture.

Add the pitted dates and raisins to the blender and pulse until a sticky mixture forms. The dates act as the natural binder.

Add cardamom powder, saffron (if using), rose water and desiccated coconut. Pulse once or twice to combine.

Transfer the mixture to a plate. If it's too sticky, refrigerate for 10 minutes. If too dry, add 2–3 more dates.

Scoop a tablespoon of mixture and roll between your palms to form smooth round balls. Apply gentle, consistent pressure.

Roll each ladoo in desiccated coconut or crushed pistachios for a beautiful finish.

Refrigerate for 30 minutes to set. Serve at room temperature. Store in an airtight container for up to 2 weeks in the fridge.
