Step-by-Step Instructions

  1. 1

Dry roast almonds, cashews, pistachios and walnuts separately in a pan on low heat for 3–4 minutes each. Let them cool completely.

  2. 2

Blend the cooled roasted nuts in a food processor until they form a coarse powder. Do not over-blend — you want some texture.

  3. 3

Add the pitted dates and raisins to the blender and pulse until a sticky mixture forms. The dates act as the natural binder.

  4. 4

Add cardamom powder, saffron (if using), rose water and desiccated coconut. Pulse once or twice to combine.

  5. 5

Transfer the mixture to a plate. If it's too sticky, refrigerate for 10 minutes. If too dry, add 2–3 more dates.

  6. 6

Scoop a tablespoon of mixture and roll between your palms to form smooth round balls. Apply gentle, consistent pressure.

  7. 7

Roll each ladoo in desiccated coconut or crushed pistachios for a beautiful finish.

  8. 8

Refrigerate for 30 minutes to set. Serve at room temperature. Store in an airtight container for up to 2 weeks in the fridge.

💡 Chef's Tips

  • Use Medjool dates for the best sticky texture and natural sweetness — they work much better than regular dried dates.
  • For a vegan version, this recipe is already 100% vegan! No dairy, no animal products.
  • To make it nut-free for school lunches, replace nuts with more seeds (sunflower, pumpkin) and dates.
  • Add 1 tbsp cocoa powder for a chocolate version that kids will love.
  • These ladoos make excellent festival gifts — pack in beautiful boxes with a ribbon for Diwali, Eid or Christmas.
